Ingredients:

  • 1 tablespoon of olive oil
  • 1 onion, diced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 tablespoon of chopped fresh parsley
  • 1 tablespoon of chopped fresh oregano
  • 1 teaspoon of dried oregano
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of black pepper
  • 1 (15-ounce) can of diced tomatoes
  • 1 (15-ounce) can of vegetable broth
  • 1 tablespoon of chopped fresh basil
  • 1 tablespoon of chopped fresh oregano
  • 1 tablespoon of chopped fresh thyme

Instructions:

  1. Heat the olive oil in a large skillet or Dutch oven over medium heat.
  2. Add the onion, red bell pepper, and green bell pepper and cook until tender, about 5 minutes.
  3. Add the parsley, oregano, and dried oregano and cook for 1 minute, stirring constantly.
  4. Add the salt, black pepper, diced tomatoes, vegetable broth, basil, oregano, and thyme to the skillet.
  5. Bring to a boil, then reduce heat to low and simmer for 15 minutes, or until the vegetables are tender.
  6. Serve immediately.
